Some of the vegetables we eat have certain properties, we have root vegetables such as beets, radishes, carrots, and turnips. We have sea vegetables which are very rich in iodine and other trace minerals.
We have blue-green algae, brown seaweed, chlorella, spirulina, and kelp. Sea vegetables are characterized by their richness in iodine.
We have root vegetables that are called tubers, like cassava, cocoa yam, Jerusalem artichoke, Irish potatoes, sweet potatoes, and yam. These are all tubers.
However, when the pH of your body is too low, then you are acidic, and certain diseases easily develop in that kind of body. For example, the ideal pH of the blood in your body is 7.365, which is mildly alkaline.
If you can maintain that level of alkalinity, germs, viruses, bacteria, fungi, cancer, and many other things like that will not thrive in your body. Vegetables help to alkalize the body.
Vegetables also have proteins in them. They contain amino acids. Some of us don’t know that vegetables also have protein. We think of proteins as only coming from animals.
Some vegetables are higher in protein than red meat, fish, turkey, and chicken. For example, some people don’t know that broccoli is very high in protein.
Vegetables are rich in antioxidants and we need a lot of antioxidants in our bodies to fight free radicals. Free radicals cause oxidative damage, and oxidative damage accelerates aging.
